Lo conoc\u00ed despu\u00e9s de leer un art\u00edculo en el que se advert\u00eda del problema biol\u00f3gico que pod\u00eda acarrear. Fui a la cofrad\u00eda de pescadores de El Palmar y les compr\u00e9 para probar\u00bb, cuenta&nbsp;<a href=\"https:\/\/valenciaplaza.com\/atraco-hedonista-maria-jose-martinez\" rel=\"noreferrer noopener\" target=\"_blank\"><strong>Mar\u00eda Jos\u00e9 Mart\u00ednez<\/strong><\/a><strong>,<\/strong>&nbsp;cocinera y propietaria de&nbsp;<a href=\"https:\/\/valenciaplaza.com\/lienzo-restaurante\" rel=\"noreferrer noopener\" target=\"_blank\"><strong>Lienzo<\/strong><\/a>. En el men\u00fa del restaurante, reconocido con una estrella Michelin desde 2021, el cangrejo azul es un ingrediente que convive con el salmonete, la gamba blanca o el cordero. En 2018 incluyeron el primer plato elaborado con este crust\u00e1ceo:&nbsp;<strong>Hoja de capuchina con cangrejo azul y mostaza casera de codium<\/strong>. Era un plato vistoso, que se serv\u00eda sobre la concha, cuando todav\u00eda pocos cocineros se aventuraban a utilizarlo. \u00abComo el cangrejo de toda la vida, este tambi\u00e9n tiene poca carne, pero es una especie con la molla muy tierna y un sabor profundo, pero delicado. Su carne, adem\u00e1s, es muy rica en vitamina B12\u00bb, explica la cocinera.&nbsp;<\/p>\n\n\n\n<p>Su uso en la cocina de Lienzo responde no solo a su sabor, tambi\u00e9n al firme compromiso que tienen la cocinera y su pareja, Juanjo Soria, con la sostenibilidad y el medioambiente.\u00a0<\/p>\n\n\n\n<p>Seis a\u00f1os despu\u00e9s de convertir por primera vez este invasor en un plato de vanguardia, Mar\u00eda Jos\u00e9 Mart\u00ednez sigue empleando el cangrejo azul en su propuesta.\u00a0<strong>Cada semana utiliza alrededor de veinte kilos.<\/strong>\u00a0El \u00faltimo de los platos, actualmente en su men\u00fa, es un\u00a0<strong>Aspic de cangrejo azul, tomate, r\u00e1bano fermentado, r\u00e1bano encurtido en vinagre de miel,\u00a0<em>cr\u00e8me fraiche<\/em>\u00a0casera y un toque de caviar<\/strong>. \u00abEs un plato muy bonito, que lleva mucho m\u00e1s trabajo del que parece. Hacemos el cangrejo al vapor, le sacamos la molla, elaboramos el Aspic con la gelatina, el\u00a0<em>bloody mary<\/em>\u2026 el resultado es brutal\u00bb, afirma. La cocinera,\u00a0<a href=\"https:\/\/valenciaplaza.com\/la-miel-urbana-con-la-que-maria-jose-martinez-cocina-y-conciencia\" rel=\"noreferrer noopener\" target=\"_blank\">que ha hecho de la miel su se\u00f1a de identidad,<\/a>\u00a0particip\u00f3 a finales de enero en Madrid Fusi\u00f3n, el congreso internacional de gastronom\u00eda m\u00e1s importante que se celebra en Espa\u00f1a, y lo hizo precisamente con una ponencia en la que elabor\u00f3 un plato con cangrejo azul.
